I always just start my next stitch with new yarn and leave all my ends till the end. I don't knot until the end. It makes the next stitch a bit fiddley but just work through it. I choose to leave 12 inch ends so I have plenty to work with, weave in, knot and trim. I hate knots in my work. I also place joins on edges and seams whenever possible. I spit splice wool yarn. Try just making a swatch or an actual scarf and change colors and cut off yarn every couple rows. Great practice! Don't do it till you get it right...do it till you can't do it wrong.
